Chicken Caesar Salad Wraps

I love easy and healthy meals and this is our go-to favorite when we want a quick meal and may have eaten out too often recently. This meal is surprisingly filling, takes less than 30 minutes to prepare, and feels like a healthy body cleanse. The recipe is a gluten free twist on a restaurant classic, chicken Caesar salad wraps. Instead of large flour tortillas that are high in carbohydrates and calories, I use smaller corn tortillas. I lightly crisp them on the stove and they become a taco shell for the chicken Caesar salad. I hope you all enjoy this reinvented recipe!


Ingredients:

2 chicken breasts

1 light Caesar salad kit (I prefer Dole)

Parmesan cheese

Corn tortillas (I prefer Mission)


Directions:

  1. Season chicken breasts with salt, pepper, and oregano. Cook on the stove in a cast iron skillet until fully cooked. Remove chicken from heat and let it rest 3 minutes. Slice into thin strips.
  2. Mix salad kit together.
  3. Heat a flat skillet on the stove. Lightly oil pan. Place corn tortillas on stove and cook until lightly brown.
  4. Add the salad to the warm tortilla, add the chicken strips, and top with Parmesan cheese. Enjoy!
