Spaghetti and Meatballs

Every once in a while I crave a classic meal of spaghetti. Store bought Gluten free spaghetti has greatly improved over the years, but can contain the same amount of calories and carbohydrates. By now I’m sure you are all aware that I prefer zucchini noodles or “zoodles.” They are so simple to make and my favorite part about them is they absorb any flavor. They are perfect for a very flavorful sauce, such as, garlic butter. This meal is made with zucchini noodles topped with garlic butter sauce and meatballs on the side. Gluten free meatballs are not difficult to make (please refer to my previous recipe), but for convienence you can also find them at the store. Just be sure to check it does not contain wheat, since those are a hidden gluten filled item. My boyfriend and I prefer extra garlic cloves for a very heavy garlic taste, but to include less garlic obsessed people you can add or subtract as many cloves as you prefer. Here is my recipe for a very flavorful and filling meal. Hope you like garlic!

Ingredients:

2-3 medium sized zucchini

4 tablespoons butter

3 cloves garlic, finely minced or pressed

1 1/2 teaspoons fresh-squeezed lemon juice

Zest from 1 lemon

8-12 pre-made medium sized meatballs

Directions

  1. Spiralize the zucchini noodles with your choice of device.
  2. In a small sauce, melt the butter until golden colored. Take off stove and add to a heat save bowl.
  3. Add minced garlic, lemon juice, and lemon zest.
  4. Place a sauté pan ont the stove and heat on medium until warm. Place the spiralazed zucchini noodles int he sauté pan with a small amount of oil. Cook until they slightly begin to soften. This should take about 3 minutes. If cooked too long they will become too soft and squishy, loosing all texture.
  5. Once the zoodles are lightly cooked, add the zoodles to the bowl of butter and other ingredients. Season with salt and pepper to taste. Place on plate, top with meatballs, and enjoy!

You can change up this recipe to fit you and your loved ones preferences. For example, we added 2 more garlic cloves since we love garlic!
